Fresh Spring Rolls


It was so recently my daughter voluteered to make fresh spring rolls for dinner. It was a great decision; the rolls were delicious. We had some with chicken filling, some with shrimp and two different sauces for dipping.

You can make fresh spring rolls with a choice of fillings but we used:

  • grated carrot
  • shredded kale
  • rice vermicelli
  • mint
  • thai basil
  • cooked chicken or shrimp

We mixed a little nuoc cham in with the above ingredients then rolled the filling in rice paper rounds. We had both nuoc cham and a peanut sauce for dipping.
