With fresh basil in hand from Mike’s Garden Harvest as well as two healthy bunches I grew myself I decided to make some fresh pesto last week. I looked for a dairy free recipe and settled on Vegan Cashew Basil Pesto from The Fitchen blog. In their recipe they paired it with zucchini pasta made with a spiralizer. I did have the zucchini on hand but not a spiralizer so we had it with fettucini. It was really good.
