There are so many vegetables this week they nearly filled my kitchen table. I’m excited to cook those potatoes; fresh potatoes taste so good. I am also toying with the idea of combining Mike’s Garden Harvest basil with the basil I have growing to make some fresh pesto. My daughters and I made a hearty salad this week with kale, lettuce and beets from last week’s delivery. Here’a a link to the recipe Dueling Avocado & Sweet Potato Kale Salad. We used both kale and lettuce so we would have enough greens. I also made the Roasted Vegetable Salad with Goat’s cheese again, this time with zucchini.
