Honey Orange Chicken Salad


I created a yummy chicken salad the other night based on several different recipes

Honey Orange Chicken Salad

4-6 boneless skinless chicken thighs tossed with salt and pepper then grilled or pan-fried
half a lettuce, washed and torn into bite sized pieces
1 bell pepper cut into bite sized pieces
1-2 oranges peeled and broken into pieces
5″ of cucumber quartered lengthwise then sliced
handful of spring onions sliced
540g can black beans drained and rinsed
1 tablespoon chopped cilantro

Dressing (from Spinach Salad with Orange Viniagrette)
zest of two oranges
juice of two small or one large orange
2 tablespoons balsamic vinegar
2 tablespoons honey
1 clove garlic peeled
3/4 teaspoon salt
3/4 teaspoon freshly ground pepper
3/4 cup extra virgin olive oil

Place all salad ingredients in a large bowl. Blend salad dressing and pour over salad. You might not want all this dressing on your salad so if you save some rest assured it also goes well on coleslaw!
