As we look forward to salad greens appearing on our door steps I thought I’d share a salad recipe our family enjoyed last year, Broccoli, Arugula & Blueberry Salad with Meyer Lemon Dressing. This is the kind of recipe that accepts a few substitutions happily. Some of us eat gluten free and dairy free at our place so this one met those criteria and just happens to be nut-free, vegan and vegetarian also.
The recipe calls for arugula but I also tried baby spinach or a mix of salad greens. It was perfect with blueberries but it also worked with other berries.
